Mengla County Dining
Mengla is a county in Xishuangbanna and local residents are mainly Dai Minority. Dai cuisine focuses on glutinous rice, baked meat and aquatic food.
What to Eat in Mengla?
1. Dai Sapie傣家牛撒撇
Dai Sapie, is an unique food of Dai, which main raw material is tripe (cow's stomach, Han called Niu Baiye). “Sapie”, a cold dish of the Dai ethnic group, have many variant kinds according to sauce and ingredient. The major ones are “Sapie with bitter sauce”, “Sapie with lemon juice sauce” and “Sapie with eggplant sauce”, and some improved dishes are Sapies with fish, pot-stewed pork as main ingredients.
"Qima" is Hani language, meaning meat porridge, which is a special dish of Hani People. It's a necessary food for marriage, festival, new house. The main materials are glutinous rice and fresh pork served with star anise powder, straw fruit powder and ginger.
3.Citronella Roast Chicken香茅草烤鸡
Clear the chicken meat and roast it to rare on the charcoal fire. Then pull the meat down and pound it soft. Mix it with pre-cut scallions, garlic, cilantro, green chiles and salt, wrap it with clear Citronella and roast it again. The last step is to cover some lard and roast foe a few minutes.
4.Dai flavored fried Niupi傣味炸牛皮
Its raw material is cowhide and edible oil. Cook the cowhide first and cut it into pieces of half a metre long and 2 inches wide. Then heat the oil in the pan, and fry the dried cowhide to crisp and yellowish. It can be eaten directly with the sour sauce or as a side dish. Dai people like to eat it with rice noodles.
