    Nuodeng Ancient Village is a well-preserved Bai ethnic village located in Yunlong County, west of Dali Bai Autonomous Prefecture, Yunnan Province. According to historical records, the village has a history of over 1,200 years. Nuodeng is especially renowned for its natural salt resources and its celebrated local specialty, Nuodeng Ham.

    Village Layout and Architecture

    Built on a steep mountainside, Nuodeng features a layered settlement structure, where houses are arranged one above another along the slope. In many cases, the back door of one household opens directly into the courtyard of the house above, creating a compact and interconnected village layout.

    Most of the existing buildings date back to the Qing Dynasty (1644–1911) and remain remarkably well preserved. These traditional Bai architectural complexes are often described as “living fossils” of Bai residential architecture, offering valuable insight into historical construction techniques and village life.

    History and the Salt Trade

    Nuodeng’s prosperity was historically driven by salt production. For centuries, local residents engaged in boiling salt, turning the village into an important salt-producing and trading center in western Yunnan.

    At the heart of the village lies an ancient natural salt well, where salty water seeps continuously throughout the year. During dry seasons, visible salt crystals form around the well, clearly demonstrating the village’s long-standing relationship with this valuable natural resource.

    Nuodeng Ham: A Culinary Heritage

    Located approximately six kilometers north of Yunlong County, Nuodeng is the birthplace of Nuodeng Ham, one of the three most famous hams in Yunnan Province. Prepared using a unique traditional curing method, the ham is known for its firm texture, rich aroma, and distinctive flavor.

    The village’s natural salt well plays a crucial role in shaping the ham’s taste, making Nuodeng Ham a truly regional specialty closely tied to its local environment.

    Modern Recognition and Cultural Influence

    Nuodeng Ham gained nationwide recognition after being featured in the popular CCTV documentary series A Bite of China. A six-minute segment dedicated to Nuodeng Ham introduced the village and its culinary tradition to a wide audience, sparking widespread interest among food enthusiasts and cultural travelers.

    Today, Nuodeng Ancient Village is valued not only for its food heritage, but also as a destination where traditional Bai culture, historical architecture, and culinary craftsmanship remain part of everyday life—making it an ideal stop for travelers seeking authentic cultural and gastronomic experiences in Yunnan.
